Ichiro Izakaya Burwood is hiring a qualified Chef to plan and organise the preparation and cooking, as well as manage our kitchen to provide the best Australian-Japanese fusion food!


About Ichiro Izakaya

Seeking to combine the best of both worlds, we have combined the familiar flavours of Australian dining with traditional Japanese Izakaya dishes, in order to create the tastiest food, we can for you.

We also have a lovely range of Japanese sake and beer for you to compliment your food, if you're keen to experience Izakaya like they do in Japan. 

As we are located in the premises of Burwood Brickworks, which aims to be the most sustainable shopping centre in the world, Ichiro Izakaya shares this vision by boasting a store fit-out made completely from environmentally sustainable and recycled materials.


The Role

Design and update menus according to customer trends and seasonal difference.


Applying solid commercial cookery skills in preparing dishes on the menu and develop new dishes.


Applying solid commercial cookery knowledge and kitchen management skills to optimise the procedures in the kitchen


Responsible for every dish that came out of the kitchen. Ensure every dish is in good quality and is presented well.


Keep in touch with suppliers and order foods and kitchen supplies.


Advising restaurant manager and owner on relevant costs including kitchen staff salaries, and price of raw materials and condiments.


Communicating with restaurant manager, kitchen staff, waiting staff, and other relevant parties regularly to optimise potential issues and risks related to food safety, health, flavour, menu, serving and presentation.


Familiar with Victoria food safety regulations and all hygiene regulations. Ensuring compliance with all aspects of Work, Health and Safety Legislation and Operation Procedures


Leading the kitchen team. Participating in kitchen staff hiring, and responsible for the training of cooks and kitchen hands.


The Candidate

Passionate about fusion food


Formal qualifications in commercial cookery required; additional hospitality management qualification preferred


At least 2 years of experience as a chef (evidence required)


Demonstrated commercial cooking skills


Demonstrated kitchen leadership and management skills


Excellent communication, delegation, and time management skills


Ability to work as part of a team and take direction


Experience in stock control, ordering, management of food costs, and budgeting


Flexible to working times


Be able to work under pressure


Legal working rights in Australia (evidence required)


Compensation

Annual rate: $63,000 - $65,000

Super: 10%
