Kempsey Fire and Rescue received the call at 6.35pm and arrived on scene.
The semi-trailer had rolled on its side and was blocking all of the southbound lanes of the highway.
The truck was transporting food goods.
"The main problem for us was to contain the diesel and stop the releasing of raspberry juice and twelve drums of beetroot juice into the table drain that could have caused an environmental problem," Kempsey Fire and Rescue Station Commander Tony Hackenberg said.
"We were on scene for a few hours before salvage crews arrived and we handed it over to them."
Southbound lanes of the Pacific Highway reopened at 4am this morning.
Police and the Rural Fire Service also attended the scene.
The driver was uninjured in the accident.
