NPWS Hastings Macleay Area Manager Shane Robinson said the sign, which was located on Hungry Road near the Hat Head Sewage Treatment Plant, had only been installed by the service a fortnight ago.
"We are confused and extremely disappointed that someone would go to the effort of bringing an angle grinder to Hat Head National Park to steal a NPWS sign," Mr Robinson said.
"We still have many national parks in the region in desperate need of repair works following last summer's bushfires. It is very disappointing that money must now be spent on replacing this sign."
NPWS are working with the police to investigate this matter.
"We are appealing to anyone with information to please contact the NPWS Kempsey office on 02 6561 6700 or Crime Stoppers on 1800 333 000," Mr Robinson said.
