At an empty Olympic Stadium because of the coronavirus, sixth-placed Union took the lead on 20 minutes when Taiwo Awoniyi scuffed his shot into the far corner.
But soon after Robert Andrich was sent off for a high studs-up challenge, with his boot connecting with Lucas Tousart's neck.
Peter Pekarik levelled early in the second half for Hertha, with Poland striker Piatek sealing their first home win of the campaign and lifting them up to 11th.
