She has lived in the Macleay since she was a young girl, and still resides in her family home. She spends a lot of her time in the garden, and even loves cooking up a roast dinner for her family every Saturday night.
Joy said she loves doing anything she can for her kids, grandkids, great grandkids, and is always keeping a positive attitude.
"It's hard to believe I made it to 100. My knees are a little sore, but otherwise I don't feel any different," Joy said.
Looking back over the years, Joy said a lot of things have changed since 1921.
"My first memory is of riding my horse to school in homemade clothes, things look very different these days watching the kids catch the school bus everyday," she said.
The words of advice she would give to the younger generation is to "live a simple life".
"Take less vitamins and eat more fresh vegetables, home grown is even better. Living through the war and the Great Depression taught us to just get on with it no matter what life threw at you. I think that is important for everyone to remember," Joy said.
She credits her longevity to never dinking alcohol, smoking cigarettes and eating organically.
"I haven't even had any takeaway food before, on the farm we just worked hard and had to make do with what we had," she said.
And as for things to look forward to, she said she can't wait to open her letter from the Queen.
